Won't this thing respond to temperature changes as well, perhaps even more than pressure changes?

Yes, it is supposed to be kept indoors in constant temperature.

Back in the old days when no one was afraid of mercury, I made my own mercury barometer with glass tubing and a full pound of mercury. It worked very well for years (I finally disassembled it when we had a toddler in the house -- more afraid of the hazards of broken glass than of the mercury.).
