Buffalo meat is undergoing a revival due to diners heightened concerns over factory farming. Earning simultaneous praise from chefs, nutritionists and environmentalists, at last you can have steak, without the guilt.
This is good news for buffalo (before they wind up on the plate), a magnificent beast that was hunted to the brink of extinction in the 1800s. Today there are about 500,000 buffaloes in North America. And according to Dave Carter, executive director of the National Bison Association, demand for the meat has risen significantly in the last five years. Sales grew by more than 20 percent last year, and are up 20 percent more so far this year. ( NY Times)
