Most pecan pie is so sweet that it is annoying. That is unfortunate. We are hopeful that this will not have that defect.

Here is a close-up.
The recipe?
Pecan Pie With No Corn Syrup
INGREDIENTS:
* 1 cup light brown sugar
* 1/4 cup white sugar
* 1/2 cup butter
* 2 eggs
* 1 tablespoon all-purpose flour
* 1 tablespoon milk
* 1 teaspoon vanilla extract
* 1/2 cup choc chips
* 1 1/2 cup chopped pecans (toast in oven while pre heating)
DIRECTIONS:
1. Preheat oven to 375 degrees F
2. In a large bowl, beat room temperature eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Finally, add the milk, vanilla and choc chips and 1 cup nuts.
3. Pour into an unbaked 9-in pie shell. Scatter remaining 1/2 cup pecans on top. Bake in preheated oven for 10 minutes at 375 degrees, then reduce temperature to 300 degrees and bake for 45 minutes, or until done.
This pie has a different appearance than pies made with corn syrup and it may appear that it is getting too brown during baking, but it will be fine.
Note: the chocolate chips are optional.
This recipe is made up from others, modified, based upon intuition. Intuition is good for that.

Comments
Mmm. Sounds good. I generally find, also, that I can cut the sugar in half, cut the salt (if any), in half, and use 3/4 volume of whole-wheat flour where the recipe calls for 1 volume of white flour. I don't think I'd try that last on a pie crust, but for chocolate-chip cookies it gives you something with an actual flavour besides "sweet."

Yankees! No good pecan pie is made with anything but Caro Corn Syrup (tm/sm/whateverm). If you want to live on the edge, use 1/2 light and 1/2 dark, but durn it, it's just plum gotta have corn syrup! The whole point of a pecan pie is toput yourself into sugar shock!

"No good pecan pie is made with anything but Caro Corn Syrup"
So not true. Or at least not completely. The pecan pies I've made substitute Lyle's Golden Syrup for part of the corn syrup, and it makes as good a pie as I've had anywhere.
The pie in the picture does not look like a satisfactory substitute. Flour in the custard? Poo.

Just put mine in the oven, in less than 5 mins, it spilled over. Recommend use of deep dish shell instead of regular. I'm trying this one because I was out of corn syrup and refuse to go to the store this close to Christ~mas! Praying it will be a good alternative. Merry Christmas to all!

Only two more days after this day of working on the government scheme. :( Then back onto the unemployment queue next week. Thirteen weeks of doing a job and only getting forty five percent of the minimum wage for it and the government wonders why the scheme is not popular ! If I was being paid minimum wage I would have enjoyed it more and had some money saved up.

An elderly couple were having dinner one evening when the husband reached across the table, took his wife’s hand in his and said , “Clara, soon we
will be married 50 years and there’s something I have to know. In all of these 50 years, have you ever been unfaithful to me?”
Clara replied, “Well, Paul, I have to be honest with you. Yes, I’ve been unfaithful to you three times during these 50 years, but always for a good reason.”
Paul was obviously hurt by his wife’s confession, but said, “I never suspected. Can you tell me what you mean by ‘good reasons?”
Clara said, “The first time was shortly after we were married, and we were about to lose our little house because we couldn’t pay the mortgage. Do you remember that one evening I went to see the banker and the next day he notified you that the loan would be extended?”
Paul recalled the visit to the banker and said, “I can forgive you for that. You saved our home, but what about the second time?”
Clara asked, “And do you remember when you were so sick, but we didn’t have the money to pay for the heart surgery you needed? Well, I went to see your doctor one night and, if you recall, he did the surgery at no charge.”
“I recall that,” said Paul. “And you did it to save my life, so of course I can forgive you for that. Now tell me about the third time.”
“All right,” Clara said. “So do you remember when you ran for president of your golf club, and you needed 73 more votes?”

Doctor Dave had slept with one of his patients and felt guilty all day long.
No matter how much he tried to forget about it, he couldn't.
The guilt and sense of betrayal was overwhelming. But every once in a while he'd hear an internal, reassuring voice that said:
"Dave, don't worry about it. You aren't the first doctor to sleep with one of their patients and you won't be the last. And you're single. Just let it go.."
But invariably the other voice would bring him back to reality, whispering:
"Dave you're a vet."
