A friend of mine has a new weblog, Low Carb Art and Science, which some of you might be interested in (or not). I do think it is ironic since this is an individual who presumably is in favor of a diet of red beans & rice. If you want a more eclectic range of posts on diet you might want to check out FuturPundit.

tx for the plug. fat booties are a gift to man, of course, but too much blood sugar will result in more glycation of proteins -- collagen being one of the most vulnerable. seeing something like that deflate is sad.

I am a low-carber and i appreciate this link very much. Like your friend, I also prefer and am in favor of a diet of beans and rice. I used to be a vegan before being diagnosed with type 2 diabetes. My diabetes is now under good control without insulin and with the bare minimum of a single medication (Metformin), due solely to my low-carb diet. Despite my best efforts (and they're good efforts; I'm a creative cook) I can't make a low-carb diet out of vegetables. It's SO frustrating!

I don't know about you but I LOVE red beans and rice! Maybe that's because I'm from Louisiana...I'm definitely in favor of any diet that incorporates red beans!
