Weekend Recipes for Work Week Eats...

There is one man in the blogosphere that I know loves to eat as much as I do. Lately he's been doing a lot of braising and it's inspired me to share with you a recipe that you could cook on a weekend and enjoy over several meals. So, I offer my recipe to you all, and to the good professor, for tequila braised pork. I made this for Sunday night dinner and the Isises have been feasting since.

Here's everything you'll need. I don't have pictures of the ingredients this time ala The Barefoot Contessa, but I did prepare it barefoot and in the kitchen. That will have to do.  Now, the ingredients:

  • A 1-2 pound pork roast
  • 2 tablespoons olive oil
  • 6 cloves chopped garlic
  • 1 yellow onion
  • 1 yellow bell pepper
  • 1/4 cup tequila (not including the volume that ends up in your belly)
  • 1 lime for the tequila that ends up in your belly.
  • 2 cubed chayote squash
  • 1 can diced tomatoes
  • 1 can chicken broth
  • 1 bunch cilantro
  • 2 dried ancho chiles
  • 2 teaspoons cumin
  • 2 teaspoons tumeric
  • 1 teaspoon coriander
  • salt and pepper
Heat oil in a large pot on medium high heat.  Brown the pork roast in the oil, 5-7 minutes on each side.  Remove the meat to a plate and sautee the garlic, onion, and peppers in the oil until very soft and wilty.  Then, and this is seriously the best part, deglaze the pot by adding the tequila and scraping all the delicious bits off the bottom.  Add the meat back, the stock, tomatoes, chayotes, cilantro, and spices.  If you've never tried chayote, this is a great recipe to give them a whirl.  They are a bit like a potato with a hint of cucumber flavor.  I enjoy them creamed, but they put potatoes to shame in any braising recipe.

Cover and cook two hours until the meat is tender and everything is delicious.  Here's what it will look like:

Oh, Goddess, you forgot the best part about braised recipes: most can EASILY be adopted to the Crock-Pot, that friend of the working mom! Brown your meat, deglaze the pan, put it in the pot, and let it go on low all day. You can even do the browning and deglazing the night before, refrigerate the stuff, and plug it in as you leave.
Imagine coming home to the aroma of this or other braised concoctions, warm and ready to eat. One of my favorites was pot roast in the Crock Pot and homemade bread in the breadmaker. Almost like having a housewife for the family without the whole "Big Love" thing.

*Gasp* The Tudors! I am loving that series. How smoking hot is Jonathan Rhys Meyers as that dirty pig King Henry?!

Also: your braised pork looks devine. I could almost smell it through your picture. Yum.

We're not big fans of pork roast in this house, but maybe it's because I've never tried cooking it like this.
