Let them eat muffins

swblocks.jpgDomestic goddess, I am definitely not. But I do love to bake, though it is rare that I get the occasion. So when I saw a couple of bananas getting too brown on the counter, I seized the opportunity.

Banana bread is too much work for a busy scientist-mama, but banana oatmeal muffins can easily be in the oven 10 minutes after you start. Even if you don't have quite all the right ingredients. Recipe and a photo below the fold.

Chunky Orchard Fruit Oatmeal muffin1.5 cup flour
1 cup rolled oats
0.5 cup granulated sugar
2 tsp. baking powder
1 tsp. baking soda
0.5 tsp salt
2 eggs
0.25 cup milk

Ingredients as written in my cookbook
0.25 c. applesauce
3 medium mashed bananas

Ingredients as actually prepared
2 smallish organic mashed bananas
1 6 oz. jar of Earth's Best Organic Chunky Orchard Fruit baby food (leftover from Minnow's baby food days, consisting of apples, pears, apricots, and bananas)

In bowl, mix flour, oats, sugar, baking powder, baking soda, salt. Make a well in the center. In small bowl, beat eggs until frothy. Mix in applesauce, milk, and bananas. Pour into well. Stir just to moisten. Batter will be lumpy (duh!). Fill greased or lined muffin tins 3/4 full. Bake at 400 degrees Fahrenheit for 20-25 minutes.

Uh, they look tasty. I always wanted to make something with bananas, I'll try yours next time I'll feel the urge to bake :-)

What good timing. When my bananas get brown, I thrown them into a container in the freezer for the next time that I will make banana bread. I realized yesterday that I have two full containers now, so I need to do something with them.

I had some brown bananas that I've been wishing would magically make themselves into banana bread too--made the muffins today but added some walnuts and a bit of vanilla (baked goods just aren't baked goods without vanilla...) Yummy!

I use both pears and bananas, no rolled oats, a bit of oil, and cocoa powder. Which reminds me that it's time to start again - this summer was way too hot to bake anything.

Oh, and a nonstick muffin tin.

Hmmmm...now I want to make banana bread in addition to the pie I made last night, the monkey bread I bought last night, and the cookies I still want to make.

That certainly looks like a yummy muffin :)
