I resemble that remark!</p> <p>(Point taken, at least career-wise. In the past 20 years, many departments have replaced retiring rock geeks with climate geeks. But some of us aren't bitter, and most of us accept that climate science has made huge advances in the past 20 years. In fact, I said something like that in a recent survey from... maybe AAAS?)</p> <p>I blog because I think rocks are interesting. But perhaps blogging about the inherent coolness of rocks isn't enough to save the field. Maybe we need a fashion makeover.</p> <p>Maybe we need a <a href="http://scienceblogs.com/isisthescientist/">goddess</a>. She used the word "temblor" and was very excited about that, too - how often do you get a chance to say "temblor"? She felt impressive and sciencey.</p> <p>I have been hanging around with seismologists for some time now, and I don't think I have ever heard anyone use the word "temblor" in either ordinary or technical speech. I think that some people must think it sounds folksy and down-home, but reality is opposite of perception here. People who live around tornadoes are tornado <i>junkies</i>. Using "temblor", which is just the Spanish word for earthquake, makes just as much sense as picking some other Spanish word at random (say, baño) and throwing it into English conversations. I mean, how does this sound to you: "A bear destroyed a local family's bathroom this morning. The bear snuck in the back door, dragged a turkey off the kitchen table and holed up in the baño. Strain out the seeds. Save the leftover pulp for baking - it makes tasty muffins.</p> <p>Preheat the oven to 325 ºF.</p> <p><b>Crust</b>: Whirl the graham crackers and almonds in a food processor until they are wee crumbs, then add the melted butter. Process until it looks like wet sand, then mush into the bottom of a pie pan. Bake for 15 minutes or so.</p> <p><b>Filling</b>: Mix the corn starch, sugar, salt, bitters, 3/4 c. blackberry juice, and 1 c. water over medium heat. When it begins to thicken, whisk in the egg yolks two at a time, then the lemon juice and remaining blackberry juice, then the butter. Bring it to a simmer while whisking constantly, and cover with plastic wrap while you work on the meringue.</p> <p><b>Meringue</b>: Mix the corn starch and water over medium heat; cook, whisking vigilantly, until it turns translucent. Remove from the heat and have it ready next to you while you beat the eggs. Mix the sugar and cream of tartar together.</p> <p>Beat the eggs until they are foamy, then add the sugar and cream of tartar a little bit at a time. When those have been incorporated and the mixture forms soft peaks, add the corn starch. Beat until you get stiff peaks.</p> <p><b>Assembly</b>: Make sure that the filling is hot when you assemble the pie. And I expected this to be one of the worst. Then again, I've also had some Guinness ice cream that was absolutely fantastic; it should be possible to replicate that experience in a pie.</p> <p>American food shies away from bitterness in any form, and especially in dessert form. Dark chocolate is starting to weaken that taboo, though. Once you have decided that nibbling on eleventypercent cacao is an acceptable after-dinner activity, there is really no reason not to open the floodgates to all manner of bittersweet delights.</p> <p>Turns out that the bitterness of hops and the complexity of a finished stout can anchor a cloud of sweet meringue. This pie sounds strange, but is actually fantastic.</p> <p><br clear="left" /></p> <!--more--><h4>Ingredients</h4> <ul>For the meringue: <li>a small handful of hops </li><li>1 Tbps corn starch </li><li>1/2 c. sugar </li><li>1/4 tsp. cream of tartar </li><li>4 egg whites </li></ul><ul>For the filling: <li>1 bottle Guinness </li><li>6 egg yolks </li><li>1/4 c. corn starch </li><li>1 c. sugar </li><li>pinch of salt </li><li>dash cloves </li><li>2 Tbsp butter </li><li>2 Tbsp dark malt extract </li></ul><ul>For the crust: <li>8-9 graham crackers </li><li>5 Tbsp. butter </li><li>2 Tbsp. dark malt extract </li></ul><p>Boil the hops in 1/2-3/4 c. of water for 20 minutes. Line a colander with cheesecloth and pour the boiled hops through to strain; leave the left over mixture in the colander until it cools, then gather the cheesecloth and squeeze the remaining water out. Reserve the water and discard the solid hops.</p> <p><b>For the crust</b>: Zip the crackers and malt extract around in a food processor, then add the melted butter. Pulse until it has the texture of wet sand, and then pat it into the bottom of a pie pan. Cook it for 15 min. or so in a 325 ºF oven, then let it cool while you make the rest of the pie.</p> <p><b>For the filling</b>: Mix the sugar, corn starch, salt, cloves, malt, and 1 1/2 c. Guinness in a sauce pan. Cook over low heat, whisking intermittently, until it begins to thicken. Then whisk in the egg yolks, two at a time, another 1/2 c. Guinness (mixed with a bit of the hop tea if you want), and finally the butter. Bring to a simmer, then cover with plastic (to prevent a skin from forming) and remove from the heat.</p> <p><b>For the meringue</b>: Mix the sugar and cream of tartar together. Whisk together the corn starch and 1/3 c. of hop tea. Cook over medium heat, whisking, until the mixture simmers and turns translucent. Set it aside. Then, start whisking the eggs. When they are foamy, add the sugar and cream of tartar, a little bit at a time. When the mixture forms soft peaks, start adding the corn starch mixture, also a little bit at a time. Beat the meringue until it forms stiff peaks.</p> <p>My meringue-making life became much simpler when I realized that the whisk attachment to our wimpy mixer will also fit in the electric drill.</p> <p>Make sure that the filling is still hot when you are ready to add the meringue; you might want to put it over low heat while you finish beating. Fortuitously, my most recent batch was mostly lamb ribs and onion butts. </li><li>~1/2 pint Guinness </li><li>Salt, pepper, and MSG to taste </li></ul><ul><li>1 cup white flour </li><li>1/2 cup whole wheat flour </li><li>8 tbps (1 stick) butter </li><li>2 1/2 tbsp vegetable shortening, and when I realized that we were out of shortening, I added some lard, too. </li><li>Small amount of ice water </li></ul><p>Heat a skillet with a small amount of oil over medium-high heat. Brown the lamb meat for a few minutes - not to cook it through, just to get those delicious Maillard reactions happening on the surface. Put it in a crock pot with the rest of the stew ingredients on low overnight.</p> <p>Cut the fat into the flour. Add the ice water a little bit at a time, mixing it in with a folding motion, until the fatty flour turns into dough. Form it into a couple of patties and chill overnight. We recorded spice-triggered covariance profiles from the filling layer at sites along inferior lateral and medial custard horizons (Rombauer areas 14 and 25). Each covariance matrix showed 6 to 8 significant eigenslices. To investigate this behavior, we solved the Child equations for flavor propagation in homogeneous layered meringue-custard spaces. By introducing slight fruitilinear perturbations to the model, we show that there exists a critical value of the dimensionless Lemon number that determines the onset of flavor convection. We synthesize piesmograms for several important endmember systems. Fussing with it never seems to generate significant improvements, but driven by the need to seem unique and creative, bars keep offering variations with pomegranate, green tea, lychee, or whatever else the flavor of the month happens to be.</p> <p>After impulse-purchasing some kiwis and throwing them into a mojito pie for the ScienceBlogs Pi Day contest, I can't say I'm any better than a bartender shilling $12 cocktails to jaded foodies. But the kiwi and lime blend seamlessly together in a refreshingly tart custard, and hey, they were on sale.</p> <p>You'll need to bake this pie at least 3 hours before you plan to eat it, so that it has time to set.</p> <!--more--><p>This recipe is based on the key lime pie from <i>The New Best Recipe</i>, my staple cookbook. (I reviewed it, along with some other helpful pie-baking books, in my <a href="http://scienceblogs.com/greengabbro/2009/01/cookbooks_with_science.php">National Pie Day cookbook-reviewing extravaganza</a>.)</p> <h3>Ingredients</h3> <p>For the crust:</p> <ul><li>~8 or so graham crackers </li><li>5 Tbsp butter </li><li>6-12 1 oz. candy canes </li></ul><p>For the filling:</p> <ul><li>4 egg yolks </li><li>1 14-oz can of sweetened condensed milk </li><li>1/2 c. lime juice - the <i>New Best Recipe</i> people did some experiments using both true key limes and the Persian limes you normally find in grocery stores, and found that the variety of lime makes absolutely no difference to the final pie. Do not waste time or money on exotic limes when you are just going to smother their subtleties with sweetened condensed milk. </li><li>lime zest - I used the zest from 7 little round limes. It is theoretically possible to use too much zest, but this is not as great a risk as using insufficient zest and having a pie with no zing. </li><li>1-3 tsp rum extract, or 1-3 tbsp dark rum </li><li>3-5 kiwi fruit </li></ul><p>For the topping, if you're into that sort of thing:</p> <ul><li>Whipped cream; or, </li><li>Use the egg whites to make meringue </li></ul><h3>Directions</h3> <p>Preheat oven to 325ºF (160ºC)</p> <p><b>Crust</b>: Run the graham crackers in a food processor, or put them in a plastic zipper-lock bag and smash them with a bottle, until they have an even crumb. Mix them in a bowl with the melted butter; add more butter, if needed, so that the mixture has the consistency of wet sand.</p> <p>Mush the buttered crumbs into a pie dish. Place in the oven for 15 minutes, until the crust just begins to brown. </p> <p>Run the candy canes in a food processor, or smash them into a coarse powder. When the crust is out of the oven, spread the candy cane powder evenly in it.</p> <p><b>Filling</b>: Whisk together the egg yolks and lime zest until the mixture turns a pale green or you are sick of whisking, whichever comes first. Add the sweetened condensed milk, lime juice, and 1 tsp of rum extract (or 1 Tbsp rum). Taste - add more rum if necessary. When you think you have enough rum, add another teaspoon, or maybe two; the lime zest will release more flavor as you cook it, and the rum will not. The amount of rum necessary to balance out the lime is what makes me think it's a good idea to use rum extract - the alcohol won't stop your filling from setting, I don't think, but if you add too much liquid overall, it will be runny. Also, rum extract is much cheaper than real rum.</p> <p>You might also add a bit of mint flavor to the filling - muddle some fresh leaves in the lime juice, or use an extract. Stick it in the oven for 15-18 minutes, until the center is firm yet wibbly when you poke it. Garnish with mint sprigs or thinly-sliced kiwi; chill for 3 hours (or more) before serving.</p> <p>I did not make a sweet topping for this pie - I like 'em tart. I also feel less guilty about having pie for breakfast when it's not smothered in whipped cream. However, if you do whip up some cream or make a meringue topping for your pie, I recommend adding a bit of rum and/or mint flavor to that as well.</p> <h3>Bonus Cocktail: Kiwi-Lime Sponde</h3> <p><img src="http://scienceblogs.com/greengabbro/wp-content/blogs.dir/265/files/2012/04/i-2fbb3f0846097f404e9b2f2a3119f6bc-kiwi-lime-sponde.jpg" alt="i-2fbb3f0846097f404e9b2f2a3119f6bc-kiwi-lime-sponde.jpg" />Creme de violette is an old-fashioned cocktail ingredient that is beginning to come back into style - or at least U.S. availability. The Mr. and I impulse-purchased a bottle of Rothman &amp; Winter's on close-out, and have been scouring the Internet for Prohibition-era cocktail recipes for the past several weeks. This is how we know that we are, indeed, jaded foodie hipsters; with a little more disposable income we would be just as unbearable as some of our friends.</p> <p>The Jupiter cocktail is more or less a martini with creme de violette or parfait amour and orange juice added. </p> <p>A Sponde cocktail (we decided last night, after paging through lists of Jovian satellites) is any one-off variation on a Jupiter. <a href="http://en.wikipedia.org/wiki/Sponde_(moon)">Sponde</a> is a tiny, tiny moon of Jupiter - a 2 km fragment of a captured asteroid, most of which survived as the larger moon Pasiphaë. Sponde is also one of the <a href="http://en.wikipedia.org/wiki/Horae">Horae</a>, who presides over the seventh hour of the day, "libations poured after lunch".</p> <p>Here's the one we made:</p> <ul><li>1 1/2 oz gin </li><li>1/2 oz dry vermouth </li><li>1/2 oz creme de violette </li><li>1/4-1/2 oz kiwi/lime juice (Procedure: Attempt to juice a kiwi on your citrus juicer. Realize that this is a dumb idea, because kiwis do not juice the same way citrus do, and you are getting mostly pulp. Juice a small lime on top of that, and then push some of the kiwi pulp through the strainer.) </li><li>1/4 tsp or so sugar </li></ul><p>Shake with ice and strain into a martini glass.</p> <p>It's good but not great; there was more lime than kiwi, and together they overpowered the violet. I thought about naming it Ganymede or Europa, in honor of its mottled grayish appearance, but it seems like a waste to name something I am unlikely to make again after one of the Galilean satellites. You have no idea what Twittering is? It's a stupid Web Eleventy-Point-Oh jibber-jabber service, pay no attention. If you are an Eleventy-Point-Oh sort of person, though, perhaps you should be <a href="http://twitter.com/mcmoots">following me</a>.)</p> <p>Googling around a bit for existing stamps that feature earth scientists, I found the pickings to be surprisingly slim. Alfred Wegener has been on stamps issued by both <a href="http://commons.wikimedia.org/wiki/File:Stamp_Alfred_Wegener.jpg">East Germany</a> and <a href="http://www.bmclean.co.uk/index.php?main_page=product_info&amp;products_id=2960">Greenland</a>, but not in recognition of his ill-fated early support of continental drift. The stamps honored his work in polar meteorology (Wegener died on an ill-fated scientific expedition to collect the first full year of weather data in interior Greenland).</p> <p>Other earth scientists with stamps:</p> <ul><li><a href="http://www.mlahanas.de/Stamps/Data/Mathematician/M.htm">Milankovitch</a>.</li> <li><a href="http://commons.wikimedia.org/wiki/File:Zhang_Heng.jpg">Zhang Heng</a>, creator of the <a href="http://www.china.org.cn/english/features/Archaeology/132771.htm">world's first seismometer</a>. </li></ul><p>The question we were having fun with at lunch, though, is this: Which earth scientists would you pick to put on stamps?</p> <!--more--><p>To avoid making this too simple an exercise in listing off a bunch of awesome dead earth scientists, I'm going to stick to a themed (at least by nationality) set of four. For example, trying to reduce your dependency on the global food monopoly or eating organic and/or local. The cheapest way to eat local/organic is to buy organic/local flour and bake your own. It's tasty too. I would be interested in estimates for how much running your oven to bake bread costs.
