Home-Made Sausages

Part of the Swedish Christmas celebrations is that many people turn to traditional cooking. Yesterday my dad's wife & mine made sausages. They were really nice, way better than their limp and grey pre-cooking appearance suggested. But they were hardly traditional, containing mouflon and elk in addition to the pork ("whatever's in the freezer") and being seasoned liberally with garlic.

Lately, friday's have just been too busy for me to get around to posting a recipe. So I decided to switch my recipe posts to saturday. I'll try to be reliable about posting a recipe every saturday. I tried making homemade salsa for the first time about about two months ago. Once I'd made a batch…
As the steam bath of summer abates and cool air moves in, as labor day weekend marks the end of swimming and time to start thinking about things like firewood and school, I find I regain enthusiasm about really cooking again. During the summer, I'm often a tepidly enthusiastic cook - it is so easy…
I wonder if Chuck Berry likes death metal. Windows 8 is amazingly bad. It's so complicated and sluggish that it has to display a progress bar when you delete or move a file locally. Interesting ethno-political misunderstanding, all my fault. Chinese Swedish dude says he doesn't like the…
Because of the holiday, I'm posting my recipe early this week. It's actually too late, but I don't let little things like reality worry me. This is my thanksgiving turkey stuffing. The origins of this stuffing date back to my discovery of the "black turkey" recipe. I tried it one year, and the…

Yummy.

Me and my family have made a lot of bread (see http://arkeologivast.blogspot.com/2009/12/for-nagon-vecka-sedan-klarade… , in swedish), smoked some pieces of elk and lamb. I am at the moment salt curing fresh herring fillets which I intend to pickle any day now. If I have the time I intend to make som lamb sausage, which I in that case will cold smoke. Maybe I´ll make som meatballs from roe deer, which I happen to have in the freezer.

Hopefully well shot an elk calf any day now. In that case I intend to make meatballs from the heart, as I did last year.

The best thing with christmas is preparing the food...

All of this talk is making me so hungry. I wish we could get some elk down here in FL but, well, they don't live here. Best I could do is get some deer venison from a few hours away but it wouldn't be the same!
